After years of working with other Michelin-starred chefs, Chef Fabien opened his own restaurant, Octopus, in the heart of Beziers, France in January 2005. The restaurant is now known as one of the best in the south of France and has received excellent reviews from respected media. In 2004, Chef Fabien was honored with the prestigious, coveted title “Un des Meilleur Ouvrier de France”, or “One of Best Craftsmen in France”, in the culinary category by the French Ministry of Labor.
Chef Fabien offers a modern French cuisine revisited and refined with Mediterranean flavors. He expresses his personality in the kitchen through a love of simplicity and demonstrates his innovative talent to satisfy all the senses. Some of his award-winning dishes include gravalax-style marinated salmon served with cucumber and cauliflower marshmallow and caviar; sautéed wagyu beef with tarragon sauce and cheminées-style potato and an extraordinary line of luscious gourmet desserts such as simmered fresh raspberry in warm rhubarb juice with Thai rice ice cream.
Food enthusiasts can enjoy the chef’s mouthwatering dishes in Lyon Restaurant with a two- course menu priced at Rp 580,000++ a three-course menu priced at Rp 720,000++ or a six-course menu at Rp 1,300,000++.
