hose who love eating fried rice can consider trying the aromatic fried rice offered by the Sea Grain Restaurant & Bar at DoubleTree by Hilton Jakarta Diponegoro. Rich with spices, this menu item uses turmeric, paprika, cumin and curry.

As the star of the menu, basmati rice is chosen because it is lighter than white rice. “Making fried rice with basmati is easier,” said the hotel's executive chef Zulkarnain. “The rice grain’s texture is already separated from each other, so it won’t get congealed.”

However, the recipe still allows white rice as a replacement. “But don’t add too much water when cooking the rice, so the result won’t be too soft and it will be easier to be mixed in a pan,” Zulkarnain explained.

Ingredients:

10 ml olive oil

30 g onions

600 g basmati rice

10 g turmeric powder

10 g paprika powder

10 g cumin

10 g curry powder

Salt - as desired

Black pepper - as desired

 

Vegetables:

30 g broccoli

30 g carrots

30 g green peas

 

Method:

  • Heat olive oil in a pan, add onions and sauté until mixture becomes fragrant.
  • Add rice, turmeric powder, paprika powder, cumin and curry powder. Season it with salt and black pepper.
  • In a separate pot, boil the broccoli, carrots and green peas for 30 seconds.
  • Add the boiled vegetables to the pan. Mix well.
