Chef brings taste of Jing-Jin to Jakarta

When Galton Zhang arrived in Jakarta from Jing-Jin city in Northern China the only ingredients he had with him were a couple of sauces.

He knew he could get most of the ingredients in Indonesia to create an authentic Chinese dish in a hotel kitchen.

Galton came all the way from the Hyatt Regency Jing-Jin city to prepare food at the Aryaduta Hotel in Jakarta until May 16. And he is preparing different dishes for every day of the week at the JP Bistro.

Aryaduta Hotel executive chef Mitele Sbardellini said it was better for the hotel to import the chef rather than the ingredients. "It's a good challenge for the chefs."

Chinese cooks are highly specialized, he said.

"A person who chops the ingredients works to perfect his chop only, while the person who handles the wok does the same thing with his craft," Mitele said.

Actually Galton's specialty is making noodle dough.

The hotel invited The Jakarta Post to taste some of Galton's specialty dishes at the JP Bistro. The unique menu features Clay Pot Sliced Lamb with Cumin, Stewed Udon Noodle With Beef Sauce, Crab with Lantern Chili and Garlic, as well as many other exciting dishes.

Galton creates many of his dishes using traditional recipes.

There was also a plateful of thousand-year-old eggs, a delicacy that is often consumed with chicken or fish congee or porridge.

The Chinese Flavor Promotion is available during lunch for Rp. 138,000++/person.

The highlight of this promotion is the chance for guests to win a round-trip ticket from Jakarta to Shanghai.
