Vegan Lemon Cake
Ingredients:
2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
3/4 cup sugar
1 1/4 cup soy milk
1/4 cup lemon juice
1/2 cup water
1/2 cup oil
1 tbsp grated lemon rind (zest)
1 tsp apple cider vinegar
Method
1. Preheat oven. Lightly grease a muffin tin.
2. Sift the flour, baking soda, baking powder in a large bowl.
3. Beat oil and sugar together in a separate bowl for two minutes. Slowly add soy milk and lemon juice, and apple cider vinegar until fully mixed.
4. Add the dry ingredients to the wet ingredients. Mix until the batter is smooth using a mixer or whisk. Add grated lemon rind with spatula. Pour into the pan. Bake for 40 minutes in a moderate oven or until cooked. (For individual servings put mixture in muffin tin and bake for 20 minutes.)
5. Allow to cool slightly. Turn out of the pan. Spoon syrup over muffins and serve.
Lemon syrup
1/2 C icing sugar
1/4 C lemon juice
Stir all ingredients over low flame without boiling until sugar is dissolved.
Vegan Almond Cake
Ingredients:
2 cups all-purpose flour
1/2 cup ground almonds
1 tsp baking powder
1 tsp baking soda Pinch of salt
3/4 cup sugar
1 1/4 cup soy milk
3/4 cup water
1/2 cup oil
1 tsp almond essence
1 tsp apple cider vinegar Icing sugar for dusting
Method
1. Preheat the oven to 350*F. Lightly grease a baking pan or muffin tin with oil.
2. Grind almonds in dry mill.
3. Sift the flour, baking soda, baking powder and salt in a large bowl.
4. Beat oil and sugar together in a separate bowl for two minutes. Slowly add soy milk and water.
5. Add the dry ingredients to the wet ingredients. Mix until the batter is smooth using a mixer or whisk. Add almond essence and apple cider vinegar until fully mixed. Add ground almonds.
6. Pour into the pan or muffin tin. Bake in moderate oven for 40 minutes or until cooked. If using muffin tin bake for 20 minutes.
7. Allow to cool. Turn out of the pan. Dust with icing sugar just before serving.
Optional: Top with flaked almonds before baking.
