Oats are a whole grain and a great source of fiber. Oats contain soluble fiber that binds with and helps remove some of the cholesterol which can clog your arteries and lead to heart disease. Adding rolled oats to cookies gives them a chewy texture and makes them a sustaining snack.
Oatmeal Vanilla Cookies
Ingredients:
1/2 cup oil
1/2 cup sugar
2 tbsp yogurt
1/2 tsp vanilla crystals or essence
1 cup rolled oats
1 cup wholemeal flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup raisins
Method:
1. Mix sugar and oil. Add yogurt and mix.
2. Add all dry ingredients to wet ingredients. Add raisins. Mix well. Mold into small balls, flatten and place on greased baking tray.
3. Bake in moderate oven for 10-15 minutes.
Variation: Add 1/2 tsp cinnamon powder. Makes 12 to 15 cookies
Oatmeal Lemon-Raisin Cookies
Ingredients:
1/2 cup oil
1/2 cup sugar or more to taste
2 tbsp yogurt
1 tsp grated lemon rind (zest)
1/2 cup rolled oats (grind in dry mill)
1 1/2 cup whole wheat flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup raisins
Method:
1. Mix sugar and oil. Add yogurt.
2. Add all dry ingredients to wet ingredients. Add raisins. Mix well. Mold into small balls, flatten and place on baking tray or cookie sheet.
3. Bake in moderate oven for 10-15 minutes.
Variation: Lemon rind can be replaced with orange rind if desired. Makes 12 to 15 cookies
Oatmeal Banana Cookies
Ingredients:
4 large ripe bananas
2/3 cup oil
1/4cup honey
2 cups whole wheat flour
4 cups rolled oats
1/2 tsp vanilla crystals/cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/2 cup raisins
Method:
1. Mash banana. Add honey and oil.
2. Add all dry ingredients to wet ingredients. Add raisins. Mix well. Drop onto greased baking tray.
3. Bake in moderate oven for 10-15 minutes.
Variation: Use chopped dates instead of raisins. Makes 35 cookies
Banana Date Cookies
Ingredients:
3 large ripe bananas
1 cup dates, chopped
1/2 cup walnuts, chopped
1/3 cup oil
1/2 tsp salt
1 tsp vanilla essence
2 cups rolled oats
Method:
1. Mash bananas leaving some chunks
2. Add oil and beat with a fork
3. Add dates and walnuts, mix lightly
4. Add oats, mix and allow to stand for a few minutes so oats absorb moisture
5. Drop onto baking tray and bake in moderate oven for 25 minutes.
These cookies contain no sugar but are naturally sweet due to the dates and banana. Even after baking they will still remain soft.
Makes about 10-12 cookies
