Mexican-inspired menus in Hotel Ibis Arcadia

few select hotels regularly offer various food promotions to treat their diners, and Hotel Ibis Arcadia is definitely at the top of the list. This time, the hotel's menu is flaunting Mexican flavors.

The promotional menu is a welcome addition to the hotel's basic menu, known as la table, which usually consists of Indonesian and Western dishes. Based in France, the hotel management creates similar menus for all of its Indonesian branches.

Poppy Levany Suzan, sales director at Hotel Ibis Arcadia, said her hotel presented new food promotions every month. This month, the hotel decided to carry on with Mexican food.

"We started this promotion in October, but we decided to extend it until the end of November because the response from diners has been great," she said.

The Mexican food promotion consists of two dishes: sopa verde and chili con carne. Sopa verde, which literally means green soup in Spanish, is made from mushrooms, baked beans, carrots and white radish.

The soup is quite easy to make. Onions and garlic are stir fried in butter, and then carrots and white radish are added. The vegetables are simmered, in a covered pan, for three minutes or until tender. Then broth or water is added.

Half the vegetables are then placed in a blender or food processor. The resulting mixture is returned to the soup, to which a mix of refined chili, onion and garlic, stir-fried mushrooms and baked beans is added.

The mix of pureed and diced vegetables results in a semi-clear, yellowish potage.

Chili con carne - essentially meat with chili - is made from minced beef, mushrooms, tomato, paprika and chili. Mexican food is famous for its spices, but Musyirwan, chef de partie at Hotel Ibis Arcadia, decided to replace jalape*o peppers with bell peppers.

He said the dish was made by stir-frying garlic and onion, adding green, yellow and red peppers, minced beef, champignons, tomato, chili powder and salt, along with red beans and water.

The chili con carne is served in a bowl made from two egg roll wrappers bound using egg yolks, fried in hot oil and formed into the bowl shape.

"I want to use ingredients we can find in Indonesia. If the guests want to have less spice on the menu, I can put the chili on the side. But so far, the guests like the food spicy," he said.

In addition to these two Mexican-inspired main course dishes, the promotional menu includes two desserts: fried ice cream and fruit pudding caramel.

To make the fried ice cream, ice cream is put inside an egg roll wrapper, which is later rolled in egg and breadcrumbs, then fried briefly after being frozen; the fruit pudding caramel is made by mixing eggs, milk and cream, with caramel added as the final touch.

The promotional menus are available for lunch (12 p.m. - 2.30 p.m.) and dinner (6 p.m. - 11 p.m.).
