Spreading love with food a la Eru

Chef special: Eru presents his version of kimchee fried rice - JP/Tertiani ZB Simanjuntak

The Korean Food Foundation has appointed singer and songwriter Jo Sung-hyun '€” better known by his stage name Eru '€” to promote Korean food culture in Jakarta.

Eru, who starred in an Indonesian movie production titled Hello Goodbye, talked up the health value of Korean food, which he says has helped him to maintain his health and weight.

'€œI once weighed 120 kilograms. I changed my diet by eating more Korean home cooking,'€ said the ballad singer, who plans to hold a third concert in Jakarta early this year.

During a press conference, Eru said he chose nasi goreng (fried rice) as his favorite local dish, over sate ayam (grilled chicken in skewers with peanut sauce), pempek (fish cake in vinegar sauce), karedok (uncooked vegetable salad) and rendang (spicy meat dish).

Sharing food for Koreans, he said, was also a means to share jeong, or affection.

'€œIn our culture, if you want to get close to someone, you have to eat with them,'€ said Eru, who occasionally cooks for his parents'€™ birthdays.

'€œBy feeding you, I'€™m sharing jeong with you.'€

Recipe

Kimchi bokkeumbap (kimchi fried rice)

The dish is made by stir-frying cooked rice with finely chopped kimchi. It balances the greasy taste of fried rice with the spicy taste of kimchi.

Ingredients

4 cups of cooked rice
200 grams of baechu-kimchi (napa cabbage kimchi)
150 grams of minced beef
Carrots
Onion
4 eggs
4 tablespoons of vegetable oil
1 tablespoon of soy sauce
Salt
Ground black pepper, to taste

Cooking

1. Heat a large skillet over high heat. Add the vegetable oil and stir-fry chopped onion until it turns translucent. Add the beef, chopped carrots and kimchi.

2. When the beef is fully cooked, add the rice and continue stir-frying. Finally season to taste with soy sauce, salt and black pepper.

3. In a separate frying pan, fry the eggs sunny side up style. Place the kimchi fried rice in the individual bowls and top each bowl with a fried egg.
