oonlite Kitchen & Bar is proud to present its new menu under the leadership of new executive chef Nyoman Gede Wardana. Based on his expertise in Balinese, Indonesian and Asian cuisine, he is the perfect addition to Anantara Seminyak Bali Resort’s award-winning restaurant.
Adding a unique twist to the dishes, the menu is designed to go together in harmony with the lunar calendar. With 20 years under his belt, chef Nyoman has planned a journey through several moon phases, each with its own specialty dish.
Start the adventure with the waxing crescent phase’s lighter and fresher dishes before moving on to the first quarter's variety of soups. The waxing gibbous moon phase offers comfort food, while the full moon highlights Moonlite Kitchen & Bar's signature dishes. Finally, the new moon offers seasonal and locally sourced produce-focused desserts.
Among his signature dishes are his Balinese crispy duck, pomelo and seafood salad, Ayam Mekalas (shredded chicken with coconut sauce) à la Chef Nyoman, coral reef red snapper fillet and pulung pulung ubi (sweet stuffed sweet potato balls), all served with beautiful presentation.
