Ingredients:

150 grams short ribs, cubed

2 lime leaves

1 piece of lemongrass

Vegetable oil

4 shallots

2 cloves of garlic

4 candlenuts

7 kluwek (black nuts)

2 red chilies

2-cm piece of galangal

 

Condiments and sides:

Bean sprouts

Chili sauce

Salted egg

Steamed rice

Melinjo crackers

Carrot

Turnip

Green tomato

 

Method:

Heat 2 tablespoons of vegetable oil, stir fry the spices along with lemongrass, galangal and lime leaves. Add salt to taste. Add the cubed short ribs to the spices. Add water and boil until the short ribs are cooked. Add more water if required. Serve with steamed rice, carrots, turnip, bean sprouts, salted eggs, fried shallots, green tomato, chili sauce and crackers.
