Those who love eating fried rice can consider trying the aromatic fried rice offered by the Sea Grain Restaurant & Bar at DoubleTree by Hilton Jakarta Diponegoro. Rich with spices, this menu item uses turmeric, paprika, cumin and curry.

As the star of the menu, basmati rice is chosen because it is lighter than white rice. “Making fried rice with basmati is easier,” said the hotel's executive chef Zulkarnain. “The rice grain’s texture is already separated from each other, so it won’t get congealed.”

However, the recipe still allows white rice as a replacement. “But don’t add too much water when cooking the rice, so the result won’t be too soft and it will be easier to be mixed in a pan,” Zulkarnain explained.
