CIRE at Alila Villas Uluwatu joins August for gastronomic collaboration

a href="https://www.alilahotels.com/uluwatu/dining/cire/" target="_blank">CIRE at Alila Villas Uluwatu is slated to host a collaboration with one of the hottest up-and-coming restaurants in Asia – Jakarta-based August, which was recently named the winner of Asia’s 50 Best Restaurants 2023, the American Express One To Watch Award.

From June 16 to 18, the collaboration will bring together two passionate chefs and their unique culinary flair – chef Sheandy Satria of Alila Villas Uluwatu in Uluwatu, Bali, and August’s chef-owner Hans Christian to craft a stunning 10-course dinner tasting menu and a Sunday brunch

A marriage of modern flavors and Indonesian influences is at the core of August’s DNA, whose elegant, contemporary restaurant in Jakarta’s Sudirman Central Business District (SCBD) has been steadily making waves since its debut in 2021. 

Drawing inspiration from his travels and childhood memories, Hans invites diners to immerse themselves in the stories behind his dishes, which champion fresh, local and seasonal ingredients sourced from around the Indonesian archipelago. 

Meanwhile, chef Sheandy’s mastery at taking inspiration from local flavors and recreating them in authentic dishes using Western techniques provides the perfect match with inventive, flavorful results.

For the four-hands dinner, guests can look forward to savoring a series of snacks and appetizers such as razor clam tempura, and rabbit rillettes with charcoal cakwe (fried bread) and Alila garden chilli jam. Flavors fresh from the sea include white fish with lemongrass and ham broth and ginger flower, while mouthwatering meat dishes include lamb short loin with caramelized galangal, tomato curry and aromatic herbs – all impeccably and creatively plated.

Sunday brunch is a decadent yet leisurely affair starring a medley of lobster creations, beautifully prepared with the perfect balance of sweet, sour, spicy and umami flavours. 

Welcoming guests with magnificent views of the Indian Ocean and cocktails created by Alila Villas Uluwatu’s liquid artist Putu Wirawan, this exclusive collaboration offers an unforgettable journey of culinary surprises and thrills.
