otel Indigo Bali Seminyak introduces chef Syamsul Rizal as its newest Japanese specialty chef. Aside from overseeing day-to-day operations at SugarSand, the hotel’s beachfront eatery, he will be giving the hotel’s menu a makeover.
Taking notes from his experience in Japanese cuisine, chef Rizal’s new lunch and dinner menu will include small bites, soups and salads. Evenings will also be livelier with multiple Japanese food stalls launching in the evening to invoke an Izakaya concept.
To name a few, he will be serving must-try dishes such as fried ramen with seafood or beef in teriyaki sauce, popcorn shrimp, beef and black cod gyoza and marinated black cod with yuzu miso (gindara miso). In January, chef Rizal introduced a new fusion delight: his Japanese-style fried rice with garlic and striploin.
Despite being deeply rooted in authentic Japanese culinary traditions that he learned during his stints at Miami’s Nobu in the United States and Dubai’s famous Zuma, chef Rizal is adamant that his ingredients be locally sourced.
