Chef Kori Antarayasa, who grew up immersed in the warmth of Balinese cooking traditions, brings a modern twist to classic flavors, blending Indonesia's culinary heritage with innovative flair. "In Bali, cooking for others is an act of love," Chef Kori said.
"It's about sharing life, nature and the spirit of community." His dishes, such as the smokey tuna banana heart lawar, transform local favorites into fresh, exciting creations that tell a story of heritage and innovation. "My goal is to create food that not only delights the palate, but also sparks conversations and brings people closer together," he adds.
The menu at RAMU Kitchen offers a diverse array of pan-Asian flavors with a Balinese twist. Bold dishes like the aged duck ssam and pig's jowl sisig taco showcase the restaurant's inventive spirit.
Meanwhile, fresh local catches, such as Jimbaran Bay slipper lobster, underscore the restaurant's commitment to using Bali's finest ingredients. To complement these dishes, head mixologist I Wayan Gunarsa has created a list of exotic cocktails.
Each drink is infused with herbs foraged from the nearby forest, including the spicy tabia bun margarita and lemon basil gin, designed to enhance the dining experience.
