Cocoa and cashew cookies, which are also commonly served to celebrate Idul Fitri, are highly preferable because, apart from being crispy, these cookies are delicious. Eating cocoa and cashew cookies to accompany afternoon coffee is a great way to celebrate Christmas in the morning or in the afternoon.
The cashew nut is taken from cashew tree, which is originally from the Amazon in Brazil. The cashew nut is believed to have health benefits. It is good for bones, nerves, skin and hair. It is also a source of energy because it contains high calorie.
Following is the secret to making cocoa and cashew cookies, taken from resepkuekeringku.com, which will hopefully be useful for you.
Ingredients:
200 g wheat flour, sifted
100 g margarine
100 g white sugar
50 g butter
25 g cocoa
1 yolk from a large egg
2 tsp chopped cashews
Several cashews, peeled and chopped into thin chunks for ornamentation.
Method:
Stir the sugar, margarine and butter until well mixed. Add the egg yolk and stir until combined. Add the sifted flour and cocoa to the mixture and stir until it becomes dough-like, then add the chopped cashews. Stir until mixture is smooth.
Knead the dough on a cutting board dusted with flour and flatten until it is about 4 mm thick. Cut the cookies with a cookie cutter. Put the cookie dough on a greased baking tray and place cashew chunks on top of each cookie.
Place the cookies in an oven preheated to 160 degrees Celsius and bake for 25-30 minutes until done. Take the cookies out of the oven and allow to cool prior to putting them in containers. (JP)
