Alila Villas Uluwatu, Park Hyatt Jakarta collaborate for gastronomic journey

I

n April and May 2023, chefs and mixologists from Alila Villas Uluwatu and Park Hyatt Jakarta will be trading places in four kitchen and bar takeovers, two in Bali and two in Jakarta.

The unique gastronomic experiences of the sister Hyatt hotels share a philosophy of thoughtfully crafted food and drinks made from the finest and freshest seasonal, local and organic ingredients.

From Park Hyatt Jakarta’s summit to the cliffs of Uluwatu, KITA 喜多 Restaurant’s Japanese executive sous chef Takeumi Hiraoka will bring the best of Japan to Bali from April 10 to 13, taking over the kitchen at CIRE Restaurant to craft an exclusive menu that showcases a selection of his signature dishes, such as lobster tempura with a sweet and spicy sauce, salted seafood soba noodles and nigiri sushi.

Born in Tokyo, Chef Takeumi is a master of the delicate knife techniques that are essential for the preparation of authentic Japanese cuisine, having honed his skills in establishments around the world. He served as head sushi chef at a popular Tokyo restaurant, became executive chef at a restaurant in Baku, Azerbaijan, and developed an award-winning restaurant in Qatar. He also opened the SORA Japanese restaurant at Park Hyatt Doha, whose discerning diners include Qatari royalty, before bringing his expertise to Park Hyatt Jakarta in 2022.

KITA Bar, one of Jakarta’s highest rooftop bars in Jakarta, is set to wow guests at Sunset Cabana Bar at Alila Villas Uluwatu on May 11 as master of mixology Agustin Da Sambiagio will bring to Bali a curation of craft cocktails that have made KITA Bar one of the city’s favourite drink and unwind hangouts. While soaking in the panoramic Indian Ocean views from the Uluwatu clifftop, guests can sip on sophisticated creations such as Mimika Treasure, a refreshing concoction of bunga pala and kemukus infused vodka, dark rum, jasmine cordial and orange juice swizzled in a Tiki mug, and Snake Martini– a fun twist on the classic Martini, made with salak sous-vide vodka, sake and white vermouth.

Originally from Buenos Aires, Argentina, Agustin started his hospitality career at an early age, finding his passion behind the bar. Acclaimed for his innovative creations and expertise, he has worked his magic at some of the world’s top bars, from South America to Southeast Asia, following his love of discovering new products, techniques and places.

Meanwhile from May 18 to 21 at Park Hyatt Jakarta’s Dining Room, Chef Harley from The Warung at Alila Villas Uluwatu will bring flavours from different regions of Bali together in a menu celebrating the traditional cuisine of the Island of the Gods. Jakarta’s gourmands can look forward to indulging in a selection of distinctive dishes, including entrees, mains and desserts that showcase the culinary diversity of Bali, from charred slow-braised pork ribs, to grilled marinated duck, and Balinese rice cakes, all perfectly complemented by The Warung’s signature assorted Balinese sambals.

I Putu Agus Harley Wijaya, also known as Chef Harley, has been a fixture in the kitchens at Alila Villas Uluwatu since 2009, and for the past decade has served as Chef de Partie at The Warung, where vibrant Indonesian and Balinese flavours take centre stage. He credits the passion he brings to his profession to cooking at home with his mother as a young boy, learning how to prepare authentic Balinese food for family and friends. Today, his greatest joy is bringing the heart and soul of Balinese food to the plate to create special dining moments.

And on May 5 at KITA Bar, Alila Villas Uluwatu’s passionate mixologist I Putu Wirawan will be creating a series of unique cocktails that each have a story to tell, inspired by famous myths and legends from around the world such as the Arabic tale of Aladdin and his magic lamp, the beauty of the Holy Grail, and enchants with an elixir from the ocean served seductively in a sea shell – intriguing accompaniments to a memorable night out on the town.

As head of mixology at Alila Villas Uluwatu since 2011, Putu has proven himself a talented liquid artist with innovative creations that combine the latest mixology trends and techniques with the best quality ingredients. At the resort’s iconic cliff-hanging Sunset Cabana Bar, his imaginatively crafted signature cocktails have elevated the art of drinking into an award-winning multi-sensory experience.

Alila Villas Uluwatu General Manager Hemal Jain said that the hotel is always looking to create authentic and awe-inspiring experiences for guests.
