As one of the first caviar houses to embrace sustainable practices, it has a legacy spanning over four decades while spotlighting Michelin-starred chefs across the globe. Guests will journey through the distinctive aromas and textures that highlight the nuanced flavors of caviar variants through the Discovery Dinner, exclusively curated by culinary director Chef Gaetan Biesuz.
This enchanting feast pairs Ahi Tuna Carpaccio with Transmontanus Caviar, punctuated by woody undertones and revealing a play of textures. Diners then continue with Prawn Chawan Mushi adorned with Baeri Caviar, evoking the exotic flavors of the ocean in each bite.
