aking place on May 3, 2024, at Politeknik International Bali, the 2024 Young Talent Escoffier competition presented a dashing display of gastronomic prowess, culinary finesse and innovation from young culinary talents across the country.
A non-profit association affiliated with Disciples Escoffier International, which has been operating since 1954, Disciples Escoffier Indonesia is dedicated to the culinary arts and upholds the esteemed Auguste Escoffier in French cuisine.
The 2024 Young Talent Escoffier is the association’s commitment to spreading its teachings of classic French cuisine, tasking contestants with creating culinary masterpieces such as mouthwatering red snapper puff pastry under a trying three-and-a-half-hour time constraint.
Judging the performance of these contestant were esteemed panelists including Hans Christian of August Jakarta restaurant, Jean-Yves Leuranguer and Fabrice Prochasson who are both Meilleur Ouvrier de France awardees.
Ultimately only one winner prevailed, who will represent Indonesia at the Asia Pacific Finals taking place in 2025, I Wayan Nara from Kempinsky Hotel.
Regarding the competition, Hans Christian said, “It is uplifting to see so many young cooks with so much drive and passion in this competition. The support for this platform is needed now more than ever to keep igniting the fire of the young generation.”
