Australian chef Tim Hollands shared butter-based recipes to 30 hotel and business students of Podomoro University on Tuesday.
During the masterclass, which took place at the university campus in Central Park Mall in West Jakarta, he cooked five recipes, including sauté vegetables with butter, lemon curd and salted caramel. He said, “Butter adds a unique flavor to food and it has a very pleasant texture. For western cooking, butter is indispensable.”
Hollands encouraged the students to experiment with butter by adding it to vegetable or fish dishes. “This technique helps to raise the food profile,” he quipped.
At the end of the event, he asked any aspiring chefs to use, try and enjoy cooking with butter.

The masterclass was part of an event held in partnership between Podomoro University and Australia’s Victoria state government. It also held a cheese masterclass on Monday, which was attended by 200 students from hospitality and vocational schools.
Australian ambassador to Indonesia Paul Grigson joined the butter masterclass as well and even helped Hollands cook.
Hollands is the head chef of Tims Foods and Tims Hollands Catering. He is recognized for creating original menus and has demonstrated his unique cooking style on TV shows across Asia and the Middle East. (kes)
