t is customary to break the fast during Ramadhan by eating dates. Chef de cuisine of Four Seasons Hotel Jakarta, Philip Walasary, fuses local tradition with Western-style salad.

“Most of our menu items here at the Four Seasons are fusion dishes. We ‘marry’ dates with salad and to enhance the flavors, we add honey lemon dressing and feta cheese,” said chef Philip.

“The simplest dressing you can add to a salad is a mixture of olive oil, lemon juice, salt and pepper. However, in this recipe we add honey to break the flavors,” he added.

The Four Seasons Hotel Jakarta’s date salad

Date Salad 

Ingredients :

  • 200 gr Medjool dates – seedless – cut into cubes
  • 200 gr orange segments - seedless
  • 100 gr toasted walnuts/cashew nuts – chopped roughly
  • 300 gr mixed green salad 
  • 100 gr feta cheese- crumble 
  • 100 gr onion – Sliced 
  • 30 gr cherry tomatoes

Dressing

  • 100 ml olive oil
  • 30 gr honey 
  • 20 ml lime juice 
  • ½ tsp salt 

Method:

  • Dressing: Mix all dressing ingredients with a balloon whisk. Set aside.
  • Toss the salad ingredients in a salad bowl, pour the dressing over.
  • Present on salad plates, garnish with micro herbs and edible flowers.

Yield : Five portions
