he Jakarta administration plans to develop a center, through city-owned slaughterhouse PT Dharma Jaya, to process the the innards of cattle for public consumption and profit.
The move is expected to help the administration stabilize beef prices, Dharma Jaya president director Marina Ratna Dwi Kusumadjati said on Tuesday.
The Jakarta administration is currently unable to process the offal of cattle as it lacks the required facilities. PT Dharma Jaya instead sells them to wholesalers at a low price.
“The offal has added value. The heads and tongues of cattle must be processed because the market price of those parts are high,” Marina told journalists at City Hall, adding that the lips, tails and hides of cattle also had high market value.
Besides consuming the meat, Indonesians are also fond of eating other parts of cattle including liver, lungs, heart and spleen. Various traditional dishes use body parts as the main ingredient, whether it is deep fried or stewed in coconut milk.
Cows' tongue sells for an average of Rp 80,000 (US$6) per kilogram in markets. However, the city administration sell all offal parts to wholesalers for Rp 7,000 per kilogram.
The administration has not announced a detailed plan on the cost and mechanism of processing the cattle parts, but Marina said the city could sell them to restaurants. (rin)
