Ramadhan recipe: Grilled lamb chops a la DoubleTree by Hilton Jakarta Diponegoro

Mediterranean cuisine is all the hype during the holy month of Ramadhan, including at the Sea Grain Restaurant & Bar at DoubleTree by Hilton Jakarta Diponegoro in Central Jakarta.

One of the restaurant's menu highlights is grilled lamb chops, which boasts a crunchy sauce and a unique taste of Dijon mustard and herbs.

Executive chef Zulkarnain explains that, after the lamb is seasoned and grilled, it is important to bake it in the oven to maintain its juices.

The grilling technique using a pan is also useful to eliminate any bacteria that may exist on the meat’s surface.

  • 300 g lamb chops
  • Salt – as desired
  • Pepper – as desired
  • Olive oil – as desired


  • 30 g butter
  • 5 g thyme
  • 15 g Dijon mustard
  • 50 g bread crumbs
  • 5 gr rosemary


  • To marinate, season the lamb chops with salt and pepper. Make sure both sides of the meat are equally covered.
  • Heat oil in a pan and grill the lamb chops until medium cooked.
  • Place the medium cooked lamb chops in a tray, bake in the oven at 180 degrees Celsius for 20 minutes.
  • Mix butter, thyme, Dijon mustard, bread crumbs and rosemary for the sauce.
  • Pour the sauce on top of the lamb chops. Garnish with extra thyme.
