You may have heard of Pasar Papringan, a traditional market that opens once every 35 days in Ngadiprono hamlet in Temanggung regency, Central Java.

However, this month you don’t need to travel all the way to Ngadiprono to experience the traditional market, as restaurant Kaum Jakarta in Central Jakarta is presenting its version of Pasar Papringan during Ramadhan.

Dubbed Pasar Papringan Go[w]es to Kaum, the restaurant uses various cutlery and furniture, such as bamboo stools, terracotta cookware and bamboo utensils, that were usually used at Pasar Papringan.

Furthermore, guests can also sample the market’s authentic dishes, such as lesah ayam (vegetables served with a combination of chicken stock and coconut milk), bajingan (cassava cooked in palm sugar) and more.

. Sayur Babanci adalah salah satu kuliner ikonik khas Betawi yang kini mulai langka. Kelangkaan ini disebabkan karena bahan dan rempah-rempah untuk membuat sayur ini sudah sulit ditemukan di Jakarta. Dinamakan Sayur Babanci karena sayur ini tidak jelas jenisnya, bahkan tidak bisa dikategorikan sebagai sayur karena tidak ada campuran sayur.  Karena sulit mendapatkan bahan-bahannya, kini warga Betawi biasanya menyajikan sayur ini hanya pada hari -hari besar keagamaan sebagai menu keluarga, seperti buka puasa, Hari Raya Idul Fitri, dan Hari Raya Idul Adha. Beberapa orang juga meyakini bahwa nama babanci diambil dari perpaduan antara babah dan enci yang disinyalir makanan ini dulunya dibuat oleh para peranakan Betawi-Tionghoa. Karena hanya dari golongan mandor dan tuan tanah saja yang bisa menghadirkan makanan ini pada hari raya. Secara umum, Sayur Babanci rasanya menyerupai gulai yang sangat dominan di aroma dan rasa rempah yang kuat. Lazimnya kuliner Betawi pada umumnya, ketupat babanci juga mencermikan karakter masyarakat Betawi yang jenaka dan nyleneh. Nama babanci, selain dianggap tidak berkelamin, ada juga yang beranggapan bahwa ketupat ini dulu adalah penganan favorit para banci atau waria. Nusa restaurant in Kemang, South Jakarta, is serving a special Ramadhan menu, featuring traditional recipes, such as sayur babanci jantung sapi in coconut shell (cow heart cooked in traditional spices), dendeng batoko sambal tulang (Padang-style beef jerky served with a sambal made of chilies and the soft part of a cow’s knee bone) and mi lethek (a traditional noodle dish from Yogyakarta).

The "Edible Story of Indonesia Ramadhan" menu also comes with complimentary welcome drink, tajil (sugary snacks and drinks consumed to break the fast) and snacks. (kes)
